Step by step process of making Sevaiyan Kheer

Ingredients

  • Sevaiyan (Vermicelli)
  • Milk
  • Sugar
  • A pinch of Salt
  • Elaichi (Cardamom) powder
  • Dry fruits (cashews, almonds, raisins chopped)
  • Ghee

Process

  1. Heat ghee in a pan on medium flame.
  2. Add dry fruits and roast them until lightly golden. Remove and keep aside.
  3. In the same pan, add sevaiyan and roast well in the remaining ghee until aromatic.
  4. Pour in milk and mix nicely, ensuring no lumps are formed.
  5. Let it cook for a few minutes until the sevaiyan becomes soft.
  6. Add sugar and a small pinch of salt, then mix well.
  7. Add elaichi powder for flavor.
  8. Put back the roasted dry fruits and mix everything together.
  9. Cook for another 1-2 minutes, then turn off the flame.

Tip: Always roast sevaiyan slowly in ghee until aromatic and light golden, as this gives the kheer a rich flavor and prevents it from becoming sticky.

Your delicious sevaiyan kheer is now ready to serve! This simple and comforting dessert is perfect for festivals, quick cravings, or family meals. Serve it warm or chilled and enjoy the rich taste of milk, ghee, and dry fruits in every bite.
