Poha Recipe (Step by Step)

Ingredients

• Poha (Flattened rice)
• Oil
• Mustard seeds
• Curry leaves
• Green chilli (chopped)
• Turmeric powder
• Salt (to taste)
• Sugar (optional, to taste)
• Fresh coconut (grated)
• Fresh coriander leaves (chopped)

Process

1. Take poha in a bowl and rinse it gently with water. Drain completely and let it rest for 5 minutes until soft.
2. Add a pinch of turmeric and salt to the soaked poha. Mix lightly and keep aside.
3. Heat oil in a pan on medium flame.
4. Add mustard seeds and let them crackle.
5. Add curry leaves and chopped green chilli. Sauté for a few seconds.
6. Add the marinated poha to the pan and mix gently.
7. Add remaining salt (if needed), a pinch of turmeric, and sugar. Mix well without breaking the poha.
8. Cook on low flame for 2–3 minutes.
9. Switch off the flame and add grated coconut and chopped coriander.
10. Mix gently and serve hot.

Tip: Always wash poha gently and drain well. do not soak it for too long, or it will turn mushy. Mixing turmeric and salt into the poha before cooking helps it absorb flavor evenly and stay soft and fluffy.
