Konkani Style Mixed Vegetable Bhaji Recipe For Daily Meals With Roti And Rice

When small quantities of different vegetables are left at home, making a mixed bhaji is the best and smartest option. Instead of wasting those little portions, you can combine them into one delicious dish that is full of taste and nutrition. This kind of bhaji is very common in home kitchens because it uses simple ingredients and turns leftover vegetables into a satisfying meal.

This quick-to-make Konkani-style mix bhaji has a fresh coconut masala that gives it a homely and comforting flavor, perfect for daily meals. How to make Mixed vegetables Sabzi?

Ingredients

• Cauliflower
• Peas
• Potato
• Drumstick
• Tomato
• Onion
• Fresh Coriander
• Curry Leaves
• Asafoetida (Hing)
• Black Pepper (Meeri)
• Garlic Ginger Paste
• Cinnamon (Dalchini)
• Bay Leaf (Tamalpatra)
• Sauf
• Coriander Seeds (Dhana)
• Fresh Coconut (grated)
• Dry Coconut (Desiccated Coconut)
• Salt
• Masala
• Oil
• Water

Process

For Sabzi

1. Heat oil in a kadai or pan.
2. Add chopped onion and sauté until it becomes light golden.
3. Add a pinch of hing and garlic ginger paste. Mix well and cook till raw smell goes.
4. Add curry leaves, bay leaf (tamalpatra), and chopped tomato.
5. Cook until tomatoes turn soft and oil starts separating.
6. Add masala and mix nicely.
7. Now add cauliflower, peas, potato, and drumstick.
8. Mix everything well so the masala coats all vegetables.
9. Add some water, cover, and let the vegetables boil and cook on medium flame.
10. Once vegetables are cooked, switch off the flame and keep aside.

For Masala Paste

1. Heat little oil in another pan.
2. Add sauf, coriander seeds (dhana), cinnamon (dalchini), and black pepper (meeri).
3. Add chopped onion and sauté till soft.
4. Add dry coconut and fry lightly.
5. Add chopped tomato and grated fresh coconut.
6. Add fresh coriander and cook for 1–2 minutes.
7. Switch off the flame and let it cool.
8. Transfer to a mixer, add little water, and grind into a smooth paste.

Final Step

1. Add salt to the cooked vegetables.
2. Add the prepared masala paste and mix well.
3. Add little water if needed and boil again for 5–7 minutes.
4. Adjust masala and consistency as per taste.

Tip: Cut all vegetables in medium-sized pieces so they cook evenly and don’t turn mushy.
